Halloween Kid Fun

This evening lots of the local Sikh kids came over to our house. They dressed up in all kinds of difference costumes. We ate dinner and then made went around our little circle here. After we got back the kids dumped all their candy out to see what they got. It was quite a fun thing for the kids! Nothing like loads of candy. When I think of candy….I think "Sick to my stomach". I remember in India when I was in boarding school, one sikh friend brought a huge trunk of candy. We ate so much that we were all sick. In any case…the kids have fun dressing up and taking baths of candy (even if they don’t get to eat it all)! This holiday is quite the opposite of healthy eating, that is for sure!

Server Crash Again (Different Server) Back up though…

It’s been a rough week or so. It seems that everything (Especially computers) are crashing in my world. The main SikhNet server crashed last week from hard drive data corruption. 24 hours of work and we got it back up again. My home computer had a crucial system file that just disappeared monday morning all of a sudden after I rebooted the computer and it wouldn’t start up. Luckily  I was able to resolve this problem without too much pain. Yesterday the second SikhNet (linux) server crashed and I’ve been working on getting it back up since last night. It’s not like I’m installing weird stuff or even doing anything. 

11 Years of running SikhNet and I have never had this many issues all at once . We used to have hosting with Rackspace.com which is an awesome hosting company. They are so on top of things and so professional. Like they advertise everywhere….they have "Fanatical support". This level of service and support comes at a premium price though (It cost us around $3,000/month for our two dedicated services, firewall, backup, and loads of bandwidth needed to host sikhnet). We hosted with them for over three years (happily), but had to move our servers to discount hosting companies to cut costs as a result of declining revenue for SikhNet. In the past most of our funding came from the SikhMatrimonials.com service. With all the shaadi competition in the market, slowly the major competitors have pinched SikhNet’s funding. Our focus changed from providing and creating commercial fee type services, to serving more and helping inspire people. Our hope was that we would transition to community support in a larger way (ie: donations from sangat like you who use SikhNet). Anways, this is still in transition….and we have been trying to kick of our annual fundraiser for SikhNet, but some issue or the other keeps popping up.

Well, I should get off the computer. My eyes are getting glazed and it’s time to rest a bit. Pray for a smooth sailing from now on for the SikhNet servers and SikhNet in general!

Vegetarian Recipes and Healthy Eating

Ok, tonight I wanted to post something a bit different then I normally do. For a while I have been thinking about posting a food recipes with the focus of being healthy, vegetarian, and yummy. In my experience most people (Sikhs included) don’t eat very healthy food. These days so much of what you buy in a normal grocery store (in Western Countries like USA, UK, Canada, etc) is extremely processed and not very healthy. We have gone from small time farming and productions to mass-production which is meant to maximize profits for the corporations. Kids these days start their day with major doses of sugar in their cereal, then drink caffeinated colas, sodas and artificially flavored sugary drinks instead of water and more natural choices. Whenever I go to a restaurant to eat and I see lemonade on the menu it is almost always some artificially flavored drink. How hard is it to squeeze a lemon and add a bit of sweetener??

Much of the vegetables and produce that is in the stores is sprayed with chemical pesticides. Cows given growth hormones that are designed to increase milk production and are hooked up to machines that just pump us much milk out as they can. Who knows how this is effecting humans who drink this milk and eat these vegetables. There is much online to read about this but I won’t go into it today. We are far from the days of the small family farm where we used to get fresh organically grown food and animals that lived humanely on the farms. (You can however get organic produce and more healthy foods from Health food stores which are now all over the place.)

It is important that we educate ourselves on eating healthy, since most of us want to live long and health lives. I was lucky to have been raised in an environment where I learned a lot about healthy eating and taking care of my body naturally. I stay away from processed foods, sugars, stimulants (yes…coffee and indian tea) and try to eat as much fresh foods.

For now though I just wanted to share some simple healthy vegetarian recipes that most of you should be able to use. I’ll start with recipes of things that I like and eat often. 

As a vegetarian my source of protein comes from many sources. One of those sources is the wonderful Tofu! Tofu can be made into so many different kinds of dishes. Here are two different recipes for things that I like. 

Scrambled Tofu

Scrambled tofu can be used as a topping or side dish for steamed or sauteed vegetables. Serve it with toast if you have for breakfast.

  • 2 Lbs. Chinese style tofu
  • 1/4 cup ghee or sesame oil
  • 1 tsp. minced gingerroot
  • 1/2 tsp. turmeric
  • dash of pepper
  • 1 bunch of green onions chopped.
  • Tamari sauce  or Bragg Liquid Aminos
  • Lemon Juice

Drain tofu and cut into small cubes. Set aside. Heat ghee or oil in a saute pan over medium heat. Saute gingerroot for 3-4 minutes. Add turmerica and pepper and saute 1 minute longer. Add tofu and green onions. Stir and heat thoroughly (mash tofu with a fork if you wish), cook out extra water until desired consistency is attained. Season with tamari, Bragg Liquid aminos or lemon juice to taste.

The above recipe is just one of many variations that you can make. I normally just put some ghee in a pan, chop up garlic and onions and add to the pan. Fry them till they are cooked. Then I add tofu and any vegetables that I have in the fridge (broccoli, peas, corn, zucchini squash, etc). I squeeze some lemon in which makes it taste good and also helps with digesting the tofu. I pour in some Bragg Liquid Aminos (available at most health food stores and is healthier than soy sauce). You can also do a variation by cutting up tomatoes and adding to it. It makes it more saucy and gives a different flavor. Stir…stir….Hmmm…I can already smell it. When I was single this was a quick and easy dish that I made often with fresh salad and some toast. I also like to steam some basmati rice and put this dish right on top!

Baked Tofu

Ok…I don’t have an exact recipe for this one. It’s simple enough to just experiment with. I’ll just write out how I normally make it. It’s great to eat with other dishes or I sometimes use in sandwiches for lunch.

Get a large baking tray and spread ghee/oil on the bottom so that it is all over the bottom. You don’t need to make it like a pool….but enough to cover the bottom. Drain tofu and cut into 1/2 inch slabs (Any size is OK). Place the pieces individually on the bottom of the baking tray lined up next to each other. squeeze the lemon juice over all the tofu pieces. sprinkle on the garlic, cayenne or any other spices that you like over all the tofu. Pour some Bragg Liquid Aminos or Tamari over the tofu. I normally flip the tofu over at this point so that both sides have been covered with the liquids.

If you want to experiment with other tastes you can add some different things to some of the tofu (like salad dressing, or nutritional yeast). Bake in the oven at 375 degrees Fahrenheit (About 190 Celsius) for 30-45 minutes. Baking time may vary depending on how much liquid ingredients you have added. The tofu will start to crisp up a bit. Bake till it is lightly crispy and browns a bit. You can vary the making times to your preference of soft or crispy-ness. 

  1. 1-2 packs of firm Chinese style tofu
  2. Juice of one medium sized lemon
  3. Bragg Liquid Aminos or Soy Sauce
  4. sprinkle of cayenne
  5. Garlic powder
  6. Oil or Ghee

Optional Variations using:

  • Nutritional Yeast (yellow powdery flakes which are high in B-vitamins and make it taste yummy!)
  • Salad dressing (you can experiment with different kinds for different tastes)

    My Friend Atma Singh from France forwarded this cool video to me. He is the actor in it talking about Yogi Tea in the beginning and the end. When they drink the yogi tea they get transported to the 70’s and then do some serious rock climbing! Yumm Yumm Yogi Tea! I need to brew up a fresh batch of tea myself. Especially now that it is cold these days!

    All the people acting on this video are very famous in the rock climbing community (most of them are or have been world champions). This video is made by PETZL, the number one company in Rock Climbing Equipment.

    Podcasting & Recent SikhWithin Episode with Snatam K

    Those of you who have an IPOD or other digital audio/video player might have heard the term "podcast". Podcasting is a way to get the audio/videos automatically downloaded to your computer or portable audio player. Once you have things set up, you will always have access to the most recent shows, as MP3 files on your computer or portable device, ready for listening!

    There are very few Sikh related podcasts at this time, however one of my friends (Dr. Savi) produces a regular podcast called "Sikhwithin". One tuned into one of the recent podcasts and enjoyed listening to it, so I thought I would share it with you all.

    Snatam Kaur’s New Album and Benefit Concert

    I just got a copy of the new Snatam Kaur Live in Concert Album today and as soon as I got home I started watching the DVD 45 min video documentary (Path of Peace) which is part of this album. It was so inspiring to watch and see the "behind the scenes" of the Celebrate Peace Tour (Snatam Kaur and company) which meant to bring peace to people all over and from all backgrounds. Narayan snuggled up on the couch as I held Charanjeet Kaur in my lap sitting on the floor. The sounds and music made everyone (including Charanjeet) quite and relaxed. It was quite nice.

    I then embarked on the next phase of my evening relaxation listening to the Audio CD of Snatam Kaur Live in Concert. I still had my parental duties to take care of so while listening to the CD after dinner I got the kids in the bathtub, cleaned them off, gave Charanjeet her nightly massage and dressed in pajamas. Near the middle of the CD when the kids were all taken care of I put on my wireless headphones and got "in the zone" lying on the couch listening to the music. All I can say is "aaaaahhhhhh". I melted away.

    Guru Gadhi Day in Espanola

    Today our sangat celebrated Guru Gadhi Day (The day when the Siri Guru Granth Sahib became the Guru for the Sikhs). We started with a yummy breakfast hosted by Sat Want Singh and Kaur and then had a Nagar Kirtan procession to the Gurdwara. Winter really is starting to set in! It was quite windy today so it was very cold being outside. Brrrr….

    This year the children again made an offering to the Siri Guru Granth Sahib. Each child had a square cloth which they painted or drew on and was then sewn together to make a ramalla for the Guru. Then today during Gurdwara the kids together presented it to the Guru and placed the ramalla on the Guru. They all looked so proud. I love things like this that get the kids involved in our celebrations and help teach them. Too often the kids take a back seat and don’t have a chance to be involved. Here are a few pictures.

    Last week I wrote a blog post about some new 2008 Sikh calendars, cards and other items that I made and am selling. I ordered a bunch of the items for gifts, and to check out the quality and I was REALLY impressed! I hadn’t yet seen how the calendars and cards would look printed (since I had only seen them in digital form). Yesterday I got them in the mail and was really happy with the quality of the printing and how the designs came out. These calendars and cards are high quality and not cheap printing. Definitely worth the cost! One cool tip if you buy the calendars is that after the month is over you can cut the page out and frame the picture. So with each calendar you get 12 beautiful pictures which you can continue to enjoy.
